Agree- a lot of people think they are chefs or grill masters or whatever the current trend might be. Just put that food in a piece of good cast iron, a couple of spices and be done with it. Years ago we had some friends that would go on and on about food prep, recipes, etc etc, so we invited the couple to one of our gumbo parties. My wife is from New Orleans, it’s her grandmas handed down recipe. No big deal, just get the roo right and cook it all up in a big pot. Did I mention, we “had” some friends?
