The bigger the better but cost and available space is always a factor.
I'd say a 2.5lb in reach of the driver's seat if possible. And a 5lb backup unit in the cargo area but still very easily accessible.
Mine sits in a Pelican case that holds the rest of my kitchen kit. As long as I put it away properly along with my other dishes it remains rust free and clean.
The temp setting is simply 0-5 on my old Engel. Anything past 1.5 equals frozen solid. You want it as close to but not freezing as possible IMO.
Also I always abide by what I call "the rule of 3". For each person in the vehicle there should be 3 beers in the fridge. I keep mine at the bottom...

Get a clean agent. If you ever have to use it you'll be happy you did. Keep a small one in reach of your driver's seat and a larger one with cargo but easily accessible. Seconds count.
I've used a series of stackable Tupperware type containers to organize the inside of my Engel. While it worked great I did not like loosing that extra space. I'm back to the pile method but do have two hanging baskets at the top as a happy medium.
I stumbled upon a stuck Jeep Renegade up in Crested Butte a couple weeks back where I really wish I would have had an inflatable jack. The vehicle had slid off a narrow road and nearly into a creek. It had no recovery points. It was high centered under the engine. An air jack could have lifted...
That Whytner looks like it pulls about double the power as my Engel but for just overnight you should be fine with just your standard car battery. Swap it out to a deep cycle / starting battery if you want some extra insurance. I would not bother adding a second battery for only overnight power...
If your willing to shell out the money for a Yeti you should really consider a 12v Fridge. I'd much rather have an IndelB fridge than any high end cooler. A 50 quart can be had for $600 or less. Just my .02

Compare the "tow" rating to the standard class three receiver and the pull rating of the winch you think you need. Then think about the different angles of force that winch may apply to the receiver verses towing.
Personally I say hard mount a winch or consider other recovery tools like a set...

Rim width will be a factor as well. My FZJ80 wheels are 8" wide. Looks like you have aftermarket wheels so I'd wager they are also 8" wide. I've run my Toyo MT/s down to 4psi on a snow run. Again no issue on a 7000lb truck
