Seen a similar setup, it was a 2x4 ratchet strapped to or through the wheel. To make almost a shoe or snow shoe for sand. Got to have the fender clearance though.

That ground anchor looks interesting. Easy to make at home, too. Wonder how well it works in tree roots.

Ground anchors are pretty cool. I don't see why it couldn't work in tree roots if it gets set right. But it might be difficult to remove if it gets wedged into a big root.

I have put some thought into it, a foot or so of auger flighting, welded to schedule 40 them burned to some solid stock. It would hold up to some heavy winching. For most pulls it would be way more than enough. I'm building one. Just have to put a little more thought into the top, the one in the video seems to hold up just fine though.
