If blends count, then the SPGO seasoning I make batches of and use on a ton of stuff'. Salt, pepper, garlic powder and onion powder.

If I had to choose only on spice, then it would be pepper.

Seeing as I am coming from Motorcycle Overlanding and just getting into Vehicle style travel, I have always kept things very simple.
Salt, pepper, sugar and my favorite, Lawry's season salt.
Now that I have a larger vehicle, I will carry a lot more herbs/spices.
I'm a big fan of Lowry's.

Wow, I don't know how you pick just one. If salt doesn't count, then I think it's just pepper for me, especially if you're talking just ONE spice. Lots of the other things posted are spice mixes. If we're talking spice mixes, I like "Montreal Steak" seasoning on LOTS of things, so I guess I'd pick that - or one of my own concoctions. But if I really had to pick just ONE actual spice, excluding salt, it'd be pepper.

Yeah, I don't think salt and pepper should count ... Those are automatic for. I pretended it read, "What is one spice, other than salt and pepper?"

I think spice is a function of what you like to cook, style of foods you enjoy. If Im BBQing beef then yeah Montreal steak spice , porc then garlic , anything Italian then I would choose basil (fresh) Chicken, thyme or paprika. Eggs a touch of paprika.. Cinnamon for fruits toasts apples. Nutmeg for burgers.. yes nutmeg but I would also need salt pepper , oregano, basil, garlic powder, cheese and an egg ..

One spice? Black pepper. Whole. In a grinder. Must have on pretty much everything.
Salt isn't technically a spice is it? Since it's a mineral, but I like ground salt (sea or rock doesn't really matter).

The best spice though is Chinese five spice

Weber's Steak and Chop seasoning for me. It's one of those perfect blends of Garlic Powder, Onion Flakes and S+P. It's my go to for grilling, camping, EVERYTHING.
