tailgate or stainless prep table from front runner. It does smell up the rig, but usually with good smells.
 
The trick is to acquire a couple of prep tables that are 'sturdy',....but not to heavy. Seems simple, but is more challenging than people think. I have used the type that chuch's and meeting halls use, but they are too heavy and too big for all but base camp, and a week long camping trip with a full size rig and bed.

Up until recently we used a Lifetime 4428 4ft x 2ft adjustable height folding table and it was perfect. Folds in half, so you only have a 2ft x 2ft x ~4" thing to stow away. The best part of it is the adjustable height legs. With them fully extended out, the table is about counter height, which is extremely comfortable to cooking and food prep while at camp. We don't need it for cooking anymore with our current setup, but we still bring it along on trips anyway because it almost always comes in handy at some point.
