Looks great so far. If you haven't passed the point of no return, i'd encourage you to include a street side door as well. You never know when a particular campsite will make one side versus the other more convenient. A scond door also gives you a backup in case a door lock were to ever fail.

I just found this on Amazon. I haven't used it yet. Should work well with a dutch oven and coals too, I hope.
Not a dumb question at all. That's another indication of poor output filtering on the power supply. You mentioned it was noisy. this is the same thing just measured on your meter.
I hope y’all are stocked up on camping stuff. I went to academy a bit ago to get a can of butane. The entire aisle was stripped.
