For GM vehicles anyway, there are 4 adjustment rings. Mines at #3 and it is good and level and I did not put a larger block in the back. With a shell on the back and fully loaded it seems a little high in the nose. Probably you won't have that problem with a winch on front.

Ya. I would LOVE to keep my truck AND have a Forester Wilderness. Not in the cards right now but if they were both older vehicles, it might be possible. For example I just got rid of my lifted Jeep Grand Cherokee WJ this past spring
Crosstrek...tome...I could fit a Coleman 52 quart cooler and a tent back there. Doubtful if a roof box AND two kayaks would make a comfy ride. Certainly very little room to sleep unless you do have a roof box. I like them and try to convince myself, but the Forester is a better fit for me so...
Speaking of BF Goodrich...Advantage TA Sport...also a good tire for a vehicle like this. My girl has them on her 2013 GMC Terrain Denali. I can't FORCE the thing not to grip the road. 3 peak mountain snowflake rated. Good for light offroad

Simple is better at first but a few accessories aren't bad. Try a simple 10 foot Perception sit-in. I think the new ones have a dry well in back and may have small fishing rod holders. Or a 9.5 Swifty.

I had a hard time with my 14 GMC Sierra when I ever first tried it. Now my gas cap doesn't click, though it does appear to close and does not throw a code. I thought for the next time I would even put a funnel within a funnel if I had to. This is nuts but at least there's a work-around
