On my Escape I usually drop down to 20psi, I run 30 on the pavement (245/70r16, 3500ish pounds curb weight and I'm running Mastercraft Courser STRs). Honestly airing down is largely subjective, just play around a little and see what you like best. Just keep the spare aired up in case you go too low.

I used to run a ZR2, little bit different but it always amazed me how much it would get through in just 2wheel drive. Flexy rear springs and a rear locker are amazing things.
Honestly, unless youre in serious stuff not having a true 50/50 split isnt that big of a deal, it just becomes very nice if you lift whee off the ground. But if you know your vehicle well, theres always a work around.

I personally like the Ford big sixes the best (240 & 300) because they were run in far more industrial applications, as such parts are cheaper and easier to get. There are tons of reasons why straight sixes are the preferred engine arrangement for HD applications.
