I use the portable ARB and prefer it since I have several vehicles. I converted it to Anderson 175A connectors and have the Warn QC on all my vehicles. As for tank, I run that in bed or on rack.
For shocks I run Rancho Monotubes with 4" Rancho Lift.
Factory fenders are fine.

That is an aspect ratio issue, not a wheel size issue. Running a 20 inch wheel with a 45% aspect ratio is just as silly as running a 15 inch wheel with a 45% aspect ratio wrt to off-roading.
I prefer spacers to lots of wheel offset. Also on many vehicles, like Chevy, you only need to put spacers on the rear to even things out.

Been doing for 15 years, 70 miles round trip, 5 days a week. No big deal. Not sure where that rumor started, glad I did not believe it.
I have Goodyear MT/R on Hummer and Goodyear Silent Armor on jeep, both are outstanding but pricey.
Had Michelins on my SUV they lasted 19000 miles. Had BFG/AT & MT on truck. They were good for 25000 miles. Brushed it off as I live several miles down a rock road. Well they paved it a few years...
First Mods for every vehicle I have purchased over the past 20 years:
1) Tint windows to legal maximum.
2) WeatherTec floor guards.
3) Vent Visors.
4) Verify full size spare tire.
Most of these are done before it even leaves the lot.
