It is a 11-inch iPad Pro with the otter box case on it (got it last month, so I don't know the year per-say). I haven't had it long, I'm still tinkering with the mount and how I want it face. So far it works great.

I have the original Apollointech with the volt meter in the middle. It looks like they made a better one now. HERE. It was very easy to install, plus if you need help there are install videos on youtube.
I just picked up the Midland MXT275 and put the main box under my glove box, it fits snug there and I bought the jeepuniq mic mount for the passenger grab bar. For right now I use the little antenna that it came with it, stuck it to the wiper cowl.
There are no public trails around us (possibly private trails), but some seasonal roads. I haven't found them but there is a few (or just one) seasonal roads in Letchworth state park.

Same, I was at overland expo east this year and the deals there were the same as black friday. Some are better but I dont think it was worth me saying "I'll wait till black friday". Now I'm like why did I wait? Same deals as expo.

I get what your saying. For your needs it isn't worth it. For me the drawer fridge would be in the back of my jeep. The setup I'm thinking would have the drawer fridge on the left with just a drawer to the right. While the top is just a flat surface that I can put stuff I need for my trips.
