Wait, maybe we can cheat a little here..

Onions aren't a spice, right? The are a vegetable, a food item. Now, that must lead us to agree that a bulb of garlic is also a food item, like an onion. So, that gives us onions & Garlic.. Worcestershire sauce isn't a spice so much as a sauce, err, a liquid thing.

Have to factor in what is most likely to be "borrowed" from nearby campsites..

Chili powder!

Lol. I'll give you onions and garlic as long as they are not in powder form, but have to draw the line at sauce. To be serious I don't think any of us leave with just one, just trying to get a handle on what people see as the most essential. That way I know what I can likely bum from a neighbor lololol.

My Hiker trailer has a pepper grinder, sea salt grinder (although I use zero salt in my food), garlic powder, crushed red peppers, and cumin. My couldn't-do-without would be peppercorns in a grinder.

I started a similar thread on ExPo a few years ago & yes, there were many responses. I started using Adobo (low salt variety) and recently became fond of "Slap ya Momma"

I don't think anyone carries just one. I sure don't. At a minimum I always have
Salt
Pepper
Cumin
Adobo
Garlic powder
Onion powder
Oregano
Basil
Bay leaves
I will have others depending on what I will be cooking but those are the base. I was just curious about what that one you cant do without if you had to pick just one.
