My kitchen will not be to fancy just 1/2”and 3/4” Baltic Birch plywood. I’m just trying to decide what kind of finish I want to use

Absolutely understand where you're coming from. I once faced a similar decision with my kitchen build. Given the quality of Baltic Birch plywood, I'd suggest going for a clear polyurethane finish. It not only enhances the natural beauty of the wood but also provides a durable protective layer against moisture and wear. Remember to lightly sand between coats for a smooth finish.
