Santa Fe to SF Bay Area - Any suggestions?

On 11/23 I’m taking off from Santa Fe to head through CO and UT and eventually make my way back to the Bay Area. I’m looking for good dirt roads to explore, hike, MTB, and camp. I’m riding solo so I’m not going to be doing any serious rock climbing. Just some fun mellow 4x4 or dirt roads with good views. I’m in a 2016 4Runner SR5 Premium. Thanks for any suggestions!
