For us, one of the very best aspects of vehicle based exploring is the ability to haul the necessary equipment and fresh food to cook "real" meals while we're camping. We'd like to share with you our recipe for fish tacos.






Crispy fish tacos with cabbage slaw, cucumber sauce, and pickled onions The very best tacos for a warm summer day on your next camping trip. Made fresh at your favorite campsite.

Makes 4-5 BIG tacos

• PICKLED ONIONS • 1 small red onion, halved and sliced thin • 2 sweet peppers deseeded and sliced into thin rings • 1 cup white wine vinegar • 2 tablespoons lime juice • 1 tablespoon sugar • 1 teaspoon salt

• CABBAGE • 1/2 small green cabbage, shredded. • 1/2 cup white wine vinegar • 1/2 teaspoon salt • 1/2 teaspoon pepper • 1 tablespoon lime juice

• CUCUMBER SAUCE (tzatziki) • 6 tablespoons sour cream • 1 tablespoon mayonnaise • 1/2 teaspoon garlic powder • 1/2 tablespoon lime juice • 1/2 teaspoon dried dill • small cucumber • pinch of salt & pepper

• FISH • 1 1/2 pounds skinless whitefish fillets, such as cod, haddock, or halibut, cut into 1/2" strips. • corn meal fish fry breading • 1 cup olive or vegetable oil

• 6 flour tortillas • fresh cilantro leaves

sounds good....i've only eaten those is restaurants and they were always on corn tortillas
