Central Florida

Only place in central Florida I am aware of is Ocala National Forest. A lot of narrow two track with the occasional water hole to drive through. A lot of very soft sand. I would suggest simply driving Pipeline rd and looking for interesting side roads along the way.
 
Just finished my Raptor-Overland build and we are looking for nice easy maiden voyage in Central Florida. The wife and I, do a little trail riding and overnighting. Ideally near some water (lake, ocean). I am seeking any/all recommendations please?

Welcome to the Overland Bound Community from another Floridian. Dispersed camping around Florida is kind of slim. Florida has some pretty stringent laws recovering dispersed camping. You can read up on these at National Forests in Florida - Camping & Cabins:Dispersed Camping
Central Florida really only has the Ocala National Forest and Citrus Wildlife management area near Inverness. There are several Facebook groups devoted to overlanding in Florida however there is a few members in those groups who spread bad information or talk down on other members because of their vehicles or equipment so please use caution. You found a good place to start.
