US Southwest CDT NM

My advice to you would be to take whatever you like and will enjoy. Driving all day on rough backcountry roads is tiring and at the end of the day it’s nice to relax and have a nice meal.

It's not like we're on the surface of the moon. We'll be passing near towns along the route, so while it's nice to pack 100% of the food, there's a chance to stop and get some fresh food along the way as well as the packaged stuff. We'll pass through Silver City, NM, a fairly large town Tuesday afternoon 'ish. Then Grants, NM, an even bigger town, around halfway, the small town of Abiqui, NM at about 3/4 of the way and end in Del Norte, Colorado. And that's if we don't detour into a town. So yeah, bring lots of food, but don't overthink it. Just make sure you have lots of water and you'll be ok.
 
Would y'all have estimates of daytime and nighttime temperatures.
We'll be at various altitudes throughout the trip. So it might be 30F at night or it might be 90F at night, you just never know. Daytime temps will probably be pleasant. It's not unusual to awaken to frost on the windshield in May.
