Any minimalists?

... What other options are there for added storage without tanking mpg."

Regarding the original post (nice WJ btw!) ... if you don't need the rear seats I'd take them out. I built a simple cargo deck made of 1/2" MDF for my 1989 XJ and had it coated with LINEX. Being flat now, it only adds a bit space space but it's so much easier to use. I treat the back of my XJ almost like the bed of my MJ. The deck is hinged and all of my tools and spares are housed under where the seat bottom used to be. There's definitely a lot of storage under there.

We rented a vehicle for a couple of weeks in Mongolia with the most basic of camp and kitchen kits to tour the countryside. The simplicity introduced by having just a few items made it easy to setup and take down camp each day and was actually a refreshing change of pace from the fully geared out rig I have at home. Now I am considering paring down what I normally take.

As if jeep owners have a choice.

Your cargo capacity is 6 pounds. Yay, one jug of water! Your dogos can carry more than that.
