4 bal swing arm style stabilizer Jack's were mounted to the new frame, along with a receiver hitch assembly. The spare tire was moved up front and a large battery box was added.

New 1/2 in ply wood was added for the floor, I flex sealed all of it.
A sub frame was added in for a bed platform.
And a 22 gal water tank .

Wife and I contemplated going this route. Drew up a half dozen interior design ideas. Folding bed into a sofa with under sofa storage was the winner. She doesn't want a proper galley. Just storage for cooler, roll up aluminum table, dry and perishable bins. Have a friend who took a 6x12 enclosed trailer with a ramp style rear door and turned the hinge upside down and mounted it on top, so it provided a shelter/cover over his kitchen hen open.

Similar to what your friend did, I plan on putting a awning in over the back /kitchen area, mine will pin into the barn doors to give the cook 3 sides of enclosure.

Here is my trailer build, its a 2018 Interstate 5x8. I built a solar generator for it, has CVT awnings on both sides and one over the rear door, LP heater. Tows great behind the FJ.

I have not done an update in a while , so here you go.
Most of the kitchen is done, waiting on the fridge/cooler to show up. I have been focusing on the exterior . Obviously did this backwards.

Raptor lined the exterior, and brought it home for its first trip.
I'm waiting for the winters fridge to show up, and trying to figure out which awning to run
