Slowly starting my build. Bought a new Overland SCAR Winch 12s . Whats a good mounting plate when using my stock steel bumper? I saw this one which is probably what I will get but would like input.

Rugged Ridge 11543.16 Winch Mount Plate for 18-21 Jeep Wrangler JL & Gladiator JT with Factory Steel or Spartacus Front Bumpers

If you have a factory Rubicon steel or a Spartacus front bumper on your new Wrangler JL you will need a specific type of winch plate to mount a winch on them. Rugged Ridge Winch Mount Plate will allow you to mount a winch up to 12,500lbs on your Steel or Spartacus bumper.

Plates a plate. Never noticed much difference, othe than having to drill for weirder winch footprints.

But us truck guys are a little jealous of your bumper options:
