I agree, I wouldn't recommend the Pats for towing. The compound is just too soft and you ride mostly on the center tread so wear will be terrible with heavy loads I would think.
If you don't need hardcore offroad traction then something like the AT3 XLT would be a better choice for heavy...

Aye, 33s are great for a daily driven rig and 35s are the best bet for a more off-road rig. 37s really start to push it for these trucks. A lot of fender work is required and the likelihood of breaking a CV goes way up with the front locker on the ZR2 but only a Dana 32.

This is the first 2nd Gen I've seen on 37s. This year he finally swapped out the temp 37s for Patagonias.
Here's how he did it.
Running 33" (285/70/17) Patagonias with 3"+ lift. Being a truck I'd really like to move up to a 35" for more ground clearance but that will require regearing from 3.42 to 4.10s to maintain oem-like final ratio. I'd also need to upgrade the front brakes. Rears have been done, sorta.
