My wife just roasted a ton of hatch chili's. We keep them in the fridge and put them on almost every meal.

I'm only making one pork butt and it should be good for one meal. We'll be there Sept. 4-7 Everyone is bringing other food too. This group has never been short on food, that's for sure!

Hawaiian rolls are great with them too. I'm making my version of Memphis Dust for the rub. The BBQ sauce will be sweet and spicy.

I'll have it for my roast beef sandwiches more than anything lol

@Boppa's Travels is picking up some onions and chips for the pulled pork meal. I'll have BBQ sauce and mayo.

I'm making about 7 lbs of pulled pork for the trip. So if anyone wants to bring some onions and pickles and buns we can pig out for dinner and/or lunches that would be awesome.
