Welcome. Best overlanding rig ever. Simple, bulletproof, huge aftermarket, slowest depreciating vehicle ever, plenty of power.
Build? Why? Pure stock it'll be more reliable.

You need 3 things for overlanding,

1. food storage, refrigeration,
2. sleeping accommodations, security,
3. reliability.

You've got number 3.
