One of the downsides of the vast majority of induction hobs is their low heat/simmering control Most just pulse on and off, meaning it can burn certain types of food that requires a constant low heat.
Vollrath does not supply to the domestic market, they supply to the catering industry. Their unit has amazing control, it stays at whatever heat you set it to, no pulsing on and off. This allows very precise and accurate cooking control.

It is a drop-in induction hob made from stainless steel. We will be installing it into a pull-out slide on the side of the vehicle. This allows us to be able to heat hot water first thing in the morning, or at the side of the road, without having to wait for our diesel cooker inside to heat up.

Vollrath is an American company, but they also sell in Europe. They sent us this unit via their supplier in Spain called Pujadas. We had a quick test here at home and it boiled 2 full UK/Irish sized coffee mugs of very cold water to a fast rolling boil in 2 minutes and 27 seconds.

Where induction really shines is outside. There is no heating element like normal electric cookers that use indirect radiation, convection, or thermal conduction. A coil of copper wire is under the cooktop. When an alternating electric current is passed through it results in an oscillating magnetic field. So the base of the pot/kettle is what heats up. We had no idea about this and we had heard about induction cooking for years! There is no wasted heat, only the cookware heats up.

This is an absolute game-changer as far as we are concerned. Anyone who has tried to use a gas/petrol cooker outside when it's windy will know how difficult it is to cook on low heat. The wind just blows the flame out. You have to constantly be tending it and relighting it. Not only that, but so much of the heat is blown away so it takes much longer to cook and wastes a lot of energy.

This unit is 1800 watts maximum. We will be powering it with a Cotek SP3000 Pure Sine inverter from Antares. This specific model is the 230V and comes with a UK plug, but you can specify a different plug or voltage depending on how you are using it.
