Currently in the process of acquiring an electronic assist mountain bike that weight 50 lbs. what are my options when my hitch is behind the plate and the tire is on the side of the truck

Could you take off the front tire of the bike, then put it inside your shell/trunk? Does your tire hitch have a secondary hitch where you can add a hitch mount for the bike?
