Caldo de Abondigas
(A.K.A. - Abondigas Soup or Mexican Meat Ball Soup)

1-1/2 pounds Lean ground beef
2 eggs
1 cup of white rice
2 cubes beef bullion
Potatoes - as desired
Carrots - as desired
(Cabbage can be added, also)

1. Boil half a pot a water with bullion cubes

2. Chop carrots and potatoes in bite size chunks and add to boiling pot.

3. Place raw ground beef, eggs and rice in a bowl and throughly knead together, by hand, season as desired.

3. In palm of hand, make golf ball size meat balls and place in boiling water.

4. Bring to boil and let simmer for at least an hour.

5. Re-season as desired

Great with hot buttered tortillas or bread.
