Insurance for overland vehicles?

I have been building a 1989 Ford Bronco up for about 2 years. (I have had it for 10 years)
Nearly finished, and it has all of the bells and whistles. I realized that now I have about 35-40k in a vehicle that would normally blue book at 5k or so.
My insurance company will only give liability, not full coverage. And they wouldn't even think of covering for a 40k value. I am told that some of the reasons are the 4" lift, winch, etc.

Any suggestions? Tons of guys are building cool off road 4x4 vehicles these days. How do you get full coverage, full-value insurance on these?

I am more worried about theft while it is just sitting at the house. I work out of town 5 days a week.
