Ended up going with a EcoFlow River 2 Pro and a BougeRV 30 Liter Fridge. Was gonna go larger on the fridge, but this one will fit in the Jeep for camping trips as well, so we'll see how I like it, and if I end up needing a bigger one, I'll upgrade.
