Made a version very close to this on a trip over the weekend. We sautéed the onion, garlic and veggies first. Then sausage. Used a can of chopped tomatoes w/juice instead of fresh. It all barely fit in a 10" oven. It turned out awesome! I highly recommend it.
We have a Turtleback trailer, so we can have a deluxe shower if we want. But, for a quick wipe down I'm a fan of the Shower Pouch. I find it makes me feel a lot cleaner than other wipes I've used.
I use a Jetboil for hiking. Had been using Coleman 2-burner stoves for the last 35 years, but just got a new Partner Steel 18" stove. A little spendy but a great upgrade if you are already carrying propane. Super hot, and indestructible.
+1 on the Outland Firebowl. We used it recently on our Mojave Road, Death Valley trip. Even though the group had a campfire, it was nice to have a quick heat source right next to our rig. A 5lb. tank lasted a couple of evenings.
Thanks for the tip on the Delta Toaster. I've never seen that. We use one of those pop-up wire contraptions on our camp stove and it pretty much sucks.
I've been on the cast iron bandwagon for a long time. The only additional tip I'll throw out is to do the initial seasoning with Flax Seed oil. Take a few hours and bake on a couple of coats in the oven. The finish holds up way longer than vegetable oil or fat. I got this from Cooks Kitchen...
We are a big fan of the propane fire bowls (Outland Firebowl). Creates a lot of heat quickly. Easier and faster than a campfire. Great to way to keep warm in the morning before the campfire gets going. Plus - they are the only campfire option during burn bans in the summer.
I've been considering one for my 4Runner, but I just couldn't get my head around why I need one in a modern vehicle. Then last week, I was having coffee with someone at any outside table at a busy intersection. People start yelling that a car is on fire. Sure enough, you can see flames...
