We're in the same PacNW boat. I use a bunch of dry-packs and I very thoroughly treated every square inch of tent with Miracle Mist Long-Term Protectant. I know it sounds like a late-night ad pitch kind of product (it slices, it dices!), but the stuff really does seem to work.
Yeah, successful dehydrating takes a little practice, but we're in Portland, OR which is epically "humid" so it can be done! Early issues we had were: overcrowding the trays, using foods that were too oily/greasy/fatty, and being impatient and using too high a temp.
