Hi. West TN here. Been to LBL a few times including a Jeep Jamboree many years ago. I usually head to the Ozarks or Ouachita's in Arkansas when I am getting away for a few days.
Many can be quite deep if it has rained recently. I was out there last year on January 2nd and 3rd. The water at the fords I came to was moving very fast and looked to be much deeper than when I was there in the summer. Use caution of it has rained within a week prior to your visit.
There are several dispersed camping sites around Wildcat Mountain on FS-132. The Ouchitas are full of dispersed camping sites though, so I am sure you will find something.
I drove that tunnel two weeks ago. Water was no more than 12-18 inches deep then. I am surprised someone broke something in there. It wasn't very technical or extremely rough. The trail back up and out, if you don't turnaround and go back through, looked pretty rough though.
There are a lot of dispersed sites along the Lindsey Motorway in the Ozark NF. Other than the water crossings on the west end, it is not very difficult. I cannot comment about the water crossings as they were very high when I was there in January and I did not try to cross.
Kanab Point on the North Rim is beautiful and does not require a National Park permit. When we went, the winds were very high and so we ended up camping about a mile in from the rim in the forest. If the wind is down, there are several great options at Kanab Point to camp right on the rim.

We dropped Zion from the itenerary. Recommended by others to drop because it was too crowded. And honestly, it was out of the way from the rest of what we wanted to see.
I know exactly what you mean. Unfortunately, due to the distance and time just to get from Memphis to there, and the fact my friend and I only get to do this every 5 years, we tend to cram a lot in. There will be plenty of stops for photos, enjoying the scenery, etc. That's also why we are...
